This Gluten-Free Pumpkin Bread Recipe Will Make Your Fall 10x Better

As the nostalgic scents and flavors of fall once again drift into our daily routines through candles, coffees, and pastries, we have rekindled our love for everything pumpkin. 

Since we could all use a fall pick-me-up in our lives without hurting our college-student wallets, here’s our favorite gluten-free pumpkin bread recipe by Green & Keto. This loaf will bring a little more *pumpkin* spice into your kitchen without having to make a daily trip to a café. Plus, without any dairy or gluten, this recipe can be enjoyed by nearly everyone, especially those with dietary restrictions (keto-friendly, gluten-free, and dairy-free)!

 You’ll need:

-½ cup of butter

-4 large eggs

-¾ cup pumpkin puree

-1 tsp vanilla extract 

-1 ½ cup almond flour

-½ coconut flour

-4 tsp baking powder

-1 tsp cinnamon 

-½ tsp nutmeg

-¼ tsp ginger

-⅛ tsp cloves

-½ tsp salt

-⅔ stevia (or another sweetener)

Once you have your ingredients, you’re only a few short steps away from your guilt-free pumpkin snack.

  1. First, preheat the oven to 350°F. Then, you’ll need to grease a 9"x5" loaf pan (butter or cooking spray should work fine), and line with parchment paper.

  2. Then, in a large mixing bowl, cream the butter and sweetener together until light and fluffy.

  3. Next, add the eggs one at a time, and mix well until combined.

  4. Then, add in the pumpkin puree and vanilla, and mix well to combine.

  5. Next, in a separate bowl, stir together the almond flour, coconut flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Break up any lumps of almond flour or coconut flour (use a sifter for the best results).

  6. Add the dry ingredients (step 8) to the wet ingredients (steps 3 and 4), and stir to combine. (If you want to spice things up, try mixing a half cup of chocolate chips, or chopped nuts) The batter will be somewhat thick.

  7. Spoon the batter into the prepared loaf pan. Bake for 45 - 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  8. Enjoy. You deserve it!
